Sesame Goddess Dressing
By Allison Rivers

Makes: 1 1/3 cups

Ingredients
1/3 cup water
1/3 cup raw tahini (sesame butter)
1/4 cup apple cider vinegar
3 tablespoons sunflower or safflower oil
1 1/2 tablespoons lemon juice, freshly squeezed
1 tablespoon tamari or soy sauce
1 tablespoon sesame seeds
1/2 tablespoon chia seeds
1 teaspoon salt
1 clove garlic
2 tablespoons minced parsley
2 tablespoons minced chives

Directions

  1. In a blender, combine all ingredients except for parsley and chives. Process until smooth.
  2. Add parsley and chives, and pulse once to combine, leaving the herbs intact.
  3. Transfer to a bottle or jar, and serve. Refrigerate for up to 2 weeks.

Pro-tip

  • The difference between tamari and soy sauce is that tamari is naturally gluten-free and often has a richer flavor, making it my preference.
